Place butter lettuce, cucumber, edamame, avocado in a large bowl, add roasted pine nuts and a sprinkle of goat cheese to the top, now your have a yum-yum salad!

For true Paleo, omit the goat cheese (not so yum-yum)

Hint: roast the pine nuts in a non-stick frying pan with a little olive oil spray. Pine nuts heat up very fast so stay close so they don’t burn!

Dressing: in a container mix equal parts balsamic vinegar and olive oil, add 1 TBLS Bragg Liquid Aminos, 1 TBLS spicy mustard, fresh garlic, salt and pepper.

Hint: I try to make a jar full to last me a couple of weeks.
